Chewy Granola Bar Recipe

This chewy granola bar recipe really does make a chewy granola bar that has a texture similar to the “Sunbelt” granola bars. I have been experimenting with this recipe for over a year now and I just love it. You can make them super healthy with flax seeds, nuts, and wheat germ or you can make them as is and they are still chock full of healthy ingredients, no preservatives, no corn syrup, and no artificial “junk”. Have fun and please let me know if you find a yummy combination that you love!!

No Bake Granola Bars

1/2 cup butter

1 cup honey

1/2 cup peanut butter

1 1/3 cup brown sugar

Bring these ingredients to a rolling boil and time for 2 1/2 minutes. Poor over –

8 cups oatmeal

2 cups rice cereal, like rice crispies (I have used nuts, cheerios, flax seeds, extra oats, bran flakes, etc)

Using wet hands press firmly into a pan ( 9×13 for thicker bars, 1/2 sheet pan for thinner bars). Top with chocolate or peanut butter chips while still warm if desired.

Don’t start timing until you have a full rolling boil.
Cool bars completely before cutting.

And don’t forget to add these to your freezer cooking list because they freeze and thaw wonderfully!!

Some of my kiddos are not all that crazy about peanut butter. Does this hint at the taste or is it dominant?

  2. It looks yummy :-) I will probably add chia and flax seed and a bit of wheat germ to pump up the healthiness.
