Freezer Friendly Crescent Rolls

Don’t you love fresh from the oven bread? And crescent rolls and all the buttery goodness are just amazing on many levels. And now I am so excited to share with you that I have found a freezer friendly crescent rolls recipe that allows you to pull crescent rolls from the freezer to rise for awhile and then, after baking, serve fresh from the oven with any dinner with NO mess.

First off mix up your dough according to the directions. This is a typical yeast dough and not hard to do at all. It does make a lot so be prepared for LOTS of dough.

2 cups Milk, scalded (heated to almost boiling but not allowed to boil)

1/2 cup Butter

7 cups of flour (white or a mixture of wheat and white is what I use)

2 envelopes (4 1/2 tsp) yeast

1/2 cup sugar/honey

2 tsp salt

2 eggs

Once milk has been scalded remove from heat and add butter to melt. In a large mixing bowl mix 4 cups of the flour, the yeast, sugar, and salt. When the milk has cooled slightly add to the mixing bowl. Slowly add the eggs and the remaining flour (if you use honey instead of sugar you might need a little extra flour to make the dough stiff enough to handle). Mix this well but DO NOT KNEAD it. The dough will still be slightly sticky and this is okay. You are now ready to place it into a large greased bowl and allow the dough to rise in a warm place for 2 hours. Once the time has passed and your dough has risen, divide the dough into 6 pieces and allow to rest for 5 minutes. Now you are ready to shape!! Roll each ball into a circle, brush with butter, and then use a pizza cutter to cut into 8 triangles. Roll up starting at the widest end and ending with the point. Now place on a cooling rack and freeze until solid. After they are solid you can transfer them to a freezer bag or container for storage.

When you wish to serve crescent rolls just remove them from the freezer to a pan and allow to rise for 3-4 hours. Then bake at 350 degrees for about 10-15 minutes, depending on oven temperature and size of your crescent rolls. Enjoy!!

After your dough has risen and you are ready for the shaping part, here are a few pictures to help you out.

I don’t measure my six balls I just eye ball it the best I can. And then I let them rest for 5 minutes. Once they have rested I start by rolling out a circle with the dough about 1/4 inch thick. After brushing the circle with a thick coating of butter, I use my pizza cutter to cut the circle into 8 pieces for medium size crescent rolls.

Once in triangles, now your dough is ready to shape. Roll your dough starting at the largest side and rolling toward the point. Place the formed crescent rolls onto a cooling rack or greased cookie sheet and place in freezer until solid. Then move the frozen rolls to a zip top bag or freezer safe container.

When you wish to serve your crescent rolls remove from freezer to a greased baking sheet and allow to rise for 3-4 hours ( I have pushed this to only 2 hours and they tasted fine just weren’t as big as usual). Then bake at 350 degrees for about 10-15 minutes depending on size and oven temperature.
