This dip is always popular wherever I take it! I love that it is fairly healthy and low cal as far as fun dips go. Plus, almost all of the ingredients are shelf stable and cost effecient making this dip easy to whip up for last minute parties or guests.

With a bag of corn chips and this dip you are sure to be invited back to any gathering you take it too!

Cowboy Caviar

1 can yellow corn                       1 can (5oz) black olives (optional)

1 can white hominy                     1 can (or 1/2 cup) diced jalapenos

1 can black beans                        1 large onion (diced)

1 can black-eyed peas                  1 large tomato (diced)

3/4 cup Italian salad Dressing       2 tsp cumin

Open all the beans and drain and rinse. Into a large bowl add the beans, olives, jalapenos, onion, and tomato. Mix well. Pour the dressing and cumin over the mixtures and stir to coat. Refridgerate for a couple of hours until ready to serve.

Serve with tortilla chips.
