Oven Fried Okra

So my family loves okra. Fried okra to be exact. But I totally dislike frying anything. Not only because of how totally unhealthy it is for my family but also just the time involoved with frying umpteen batches to feed a family of our size. So, I decided to try to roast or “fry” it in the oven.

First thing I did was to rinse the okra in a colander and then sprinkle it liberally with salt. And then I let it sit for about 10 min. This pulls out all of that sliminess that people usually associate with okra. After the 10min I rinsed the okra again.

Then I dumped it into a large zip top bag that already contained a mixture of corn meal, salt, garlic salt, pepper, and a sprinkle of red pepper.

I shook the bag and then I let it sit again for about 10 min while my oven preheated to 400 degrees.

Next I put a thin layer of vegetable oil in my pan, just enough to wet the bottom well, and then I spread my okra on the pan. Now spray the okra with non-stick spray.

I baked it in the oven for about 20 min then I stirred it around and let it finish cooking to my desired browness.

Then we enjoyed our yummy and crispy and NOT greasy oven fried okra.
