Giving Thanks – Carmel Corn

Today there is a link up of food that could be used as gifts for the upcoming holida season. I wanted to include this recipe in the link up as it is one of my favorites to give and one of my family’s favorite to eat too! It is easy to make and makes a ton but it looks like it took hours!!


Today I made two batches of Carmel corn with the help of a friend. I am mailing some to my sister who is currently deployed to Iraq and keeping some for us. It was nice to visit with an old friend while carrying on a tradition I have done for the past five years now. Here’s to great holiday snacking!!
Carmel Corn
3 bags microwave popcorn (about 10-12 cups of air popped works well too)
1 cup margarine
2 cups brown sugar
1/2 cup light corn syrup
1 tsp. salt
Bring these ingredients to a rolling boil and boil w/out stirring for five minutes. Adjust your heat to keep the boil to a gentle rolling boil. Add 1/2 tsp baking soda and stir well. Pour over popped corn immediately then stir. Bake at 250 degrees for one hour stirring every 15 minutes. Turn out onto wax/parchment paper to cool. Break apart and store in sealed container.

  1. Did you know this is a very expensive recipe for me? It’s not the ingredients that are so pricey, but the trips to the dentist afterward eating (it all)! I could easily be addicted to this stuff. In fact, I can’t wait to make it right now.

  2. Fab recipe! My fav popcorn is peanut butter. The first time (many moons agao) my husband said he’d make me some I really turned up my nose at the idea, but I tried it anyway, then couldn’t eat enough..lol
