Freezer Cooking

Edited – I did not bake the burritos prior to freezing. I just filled, rolled and froze. Now when we want one I pull it out of the bag, place on cookie sheet and bake for about 30min.

As I mentioned on Monday I have been cooking. And doing lots of it. With almost every meal I am making extra for the freezer. This method works so much better for me than spending an entire day in the kitchen. Especially right now when my feet are apt to hurt after being on them for any length of time. So, what have I been cooking? Well lots of things. I have made extra cinnamon bread and froze that. I made extra bread dough and froze some dinner rolls that are ready to rise and bake. And then there are these . I used them as a starting place and then took the recipe and made it my own.

Here is what I did –

I browned hamburger with some onion in it. Then I seasoned it up like taco meat and added some salsa to moisten it. Then I took the flour tortillas and layered them with refried beans, my meat mixture, and lots of cheddar cheese. I rolled them up and brushed them with a little oil and baked them at 350 degrees until they were crispy. These were amazingly simple and yet so very yummy my family couldn’t say enough about them.

I also froze many extras by laying them on a cooling rack in the freezer for about 20 min. Then I transfered them to a freezer bag and now they are nestled in the freezer waiting to be reheated when needed!

  1. When you froze your roll ups did they come right of the oven and in to the freezer or how did you do that? Thats a great idea nad so simple.

  2. Great idea! I can’t wait to get started on my freezer meals for when the baby gets here. Last time I didn’t have nearly enough frozen and we ended up eating out a lot more then I like to. Can’t wait for more!

  3. Sounds yummy. How many did you make. How many do you think would make a meal for someone like Casey? He usually eats 3 burritos. I want to make alot. That seems like it would be a good thing for lunch for Casey.
