Homade Chewy Granola Bars

I made these this morning to send with my dad as he travels down to take my sister, Erin, her car and to pick up my mother. My mom has been gone for four weeks now. It will be so good to see her again! Anyway, back to the bars. My children LOVE these and they are super easy to make and I know what is in them and it isn’t tons of sugar. So these are a win – win answer in my book!

Ingredients

1/2 cup packed brown sugar
1/3 cup peanut butter
1/4 cup corn syrup
1/4 cup butter, melted (I use applesauce)
1 teaspoon vanilla extract
1 1/2 cups quick-cooking oats
1/4 cup sunflower kernels (I have omitted before and they are good but the depth of flavor is better with)

1/4 cup raisins (sometime I use these and other times the choc. chips, I’ve never mixed them)
3 tablespoons toasted wheat germ ( I have used this and flax seed
1/2 cup semisweet chocolate chips
Combine all ingredients in a large bowl. Pour into a lined baking sheet (8X8) and bake for 15-20 minutes at 350 degrees.
I ALWAYS double this and use a 9X13 cake pan for the baking. Allow to cool prior to cutting and I store them in the fridge to make themĀ a little more sturdy.
