Homemade Potato Soup Recipe

If you love homemade potato soup but always assumed it was a ton of work to make it yourself this recipe will prove you wrong. It is super easy to make and can be on the table in about 30 minutes. The flavor is amazing for such a simple recipe and served with some crusty bread or a salad you have a great weeknight dinner.

My whole family loves this soup which is saying something because our tastes are as varied as our personalities around here. I am sure it will please your family as well. So, grab some milk and potatoes the next time you are at the store and get ready to be amazed at what a great soup you can create with very little effort.

Potato Soup

1/4 cup butter                                                                                        1 (12oz) can evaporated milk

3 cloves minced garlic                                                                           2 cups whole milk

3 green onions                                                                                       Water (to desired consistency)

1 cup crumbled cooked bacon                                                                6 potatoes(baked and cubed)

Melt butter in a large pot. Add in garlic and onions and sauté until soft. Add both milks, bacon and potatoes (I leave the peels on my potatoes but you can peel them if you prefer) to the pot. Allow to simmer for at least 20 minutes so that the flavors can mingle and then add water to reach your desired consistency. Serve with additional bacon, sour cream, or cheese as toppings if desired or just with some great crusty bread! Enjoy!
