This easy freezing method only takes a pot, water, green beans, and freezer quality bags or containers.

Step 1 – Start with fresh green beans that are firm in texture and that “pop” when you try to bend them. You don’t want them so rubbery they just bend without breaking. Break both ends off each bean and break into bite sized pieces.

Step 2 – Bring a large pot of water to a full rolling boil. Add a small batch of beans to the water. Don’t add too many, you want the boil to return quickly and the beans to move freely in the water. Boil the beans for 3 minutes.

Step 3 – Quickly remove the beans from the water and place them in a cold water bath. The water needs to be very cold and needs to stay cold while the beans soak for another 3 minutes. This stops the cooking and preserves the freshness of the beans. I like to use ice in my water at first and then cold running water washing over them almost the whole time to keep the water cold.

Step 4 – Allow the beans to dry well. I accomplish this best using a large bath towel spread on my dining room table with the fan going above it. Once the beans are fairly dry you are ready to bag and freeze! When you are ready to enjoy your green beans just cook as you would a bag of frozen beans from the store.
